We had the good fortune of connecting with Laurent Vrignaud and we’ve shared our conversation below.
Hi Laurent, every day, we about how much execution matters, but we think ideas matter as well. How did you come up with the idea for your business?
The idea for MOULIN has deep roots in my childhood and the passion I’ve always had for the café and bakery culture. Growing up in Montmartre, I was surrounded by these charming bistros that had this incredible ability to bring people together. Everything from the simple yet perfectly executed food, to the furniture, to the overall ambiance—it all fascinated me. It wasn’t just about eating; it was about experiencing a moment. That feeling stayed with me as I grew older and became a driving force behind creating MOULIN. I wanted to bring a piece of that Parisian lifestyle to the U.S., to offer people more than just pastries and coffee—an authentic bistro experience.
Let’s talk shop? Tell us more about your career, what can you share with our community?
My career started in the sports industry, selling surf and snowboard gear in California. After building a successful business, I realized my true passion was rooted in my childhood in Montmartre, where bistros were an experience, not just a meal. At 50, I followed that passion and opened MOULIN to bring authentic French café culture to California.
It wasn’t easy, especially during COVID, but the challenge pushed us to adapt and grow. What sets MOULIN apart is our commitment to authenticity—from the food to the décor—and our incredible team. I want people to know it’s never too late to follow your passion, and success comes from hard work, resilience, and surrounding yourself with the right people.
Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
If my best friend were visiting for a week, I’d start the mornings with a run at sunrise on Crystal Cove with my running friends—it’s the perfect way to show off the beauty of the coast. After that, I’d take them along my usual route, checking out all the MOULIN locations along the coast. We’d begin at the San Clemente store with breakfast, probably some fresh croissants and coffee, and then head down to North Beach to see the swell.
From there, we’d drive up to Dana Point and check out Salt Creek Beach, another favorite spot. Afterward, we’d make our way to Laguna Beach, where I raised my kids and have such a deep connection. I’d take them down Main Street, say hello to some friends who run local restaurants, and walk the promenade.
For lunch, while I usually eat at bouillon, my bistro in Newport Beach, I’d take them somewhere uniquely Californian—Bear Flag Fish Co. on the peninsula for some fresh seafood. After that, we’d explore Lido Marina Village and enjoy the relaxed vibes.
To finish the day, we’d grab a coffee and pastry back at MOULIN before heading over to Balboa Island for a relaxing afternoon stroll to soak up the charming atmosphere. It’d be the perfect mix of coastal beauty, great food, and local culture!

I’d love to dedicate this shoutout to the incredible team I have the privilege of managing at MOULIN. Our staff comes from all walks of life—different ages, nationalities, and backgrounds—and every single person brings something unique to the table. It’s this rich diversity that really forms the foundation of MOULIN. Whether it’s their passion for food, their dedication to service, or their creative energy, each person adds their own piece to the edifice we’ve built together. MOULIN wouldn’t be what it is today without their hard work, support, and talent, and I’m incredibly grateful to each of them for making this dream a reality.
