Hi Coral, how does your business help the community?
I buy from 7-8 San Diego farms weekly. Supporting the local economy with a small footprint is vital to our health and our economy locally, and globally.
Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Being a true farm to table restaurant automatically sets me apart from any other restaurant. My menu is created daily based on directly what I purchase from 7 San Diego farms. Creating a menu every day is so exciting and nerve wracking. Spending alot of time at the restaurant (12-18 hours a day) for almost 6 years has allowed me to have a very unique, yet precise view on my business. Some of the biggest challenges, at least initially was gaining staff. When you are a brand new restaurant, a no name chef, a no name restaurateur- it was difficult to hire staff that were willing to work for a new restaurant. As I have gained success and notoriety, I get applicants all the time now. Most importantly the restaurant business is hard, I already knew that. But if you don’t have passion and drive every single day, your restaurant will fail. I relate my restaurant success to extremely hard work and dedication, combined with doing what I love, every single day.
The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My husband, Russ Strong. He has painstakingly supported me 100% along the way since I opened the restaurant 5 1/2 years ago. While he works full time as a software engineer, he also does whatever it takes to help support me at the restaurant. From doing dishes when a dishwasher calls out, to being my handyman, he does all the online presence, and has helped me make decisions shaping how we have successfully ran the restaurant.
