We had the good fortune of connecting with Mario Medina and we’ve shared our conversation below.
Hi Mario, what makes you happy? Why?
Being able to help makes me happy because when I need it, there were people who did not think twice about helping me, for example, I like to donate my time to non-profit organizations, it is to be able to people who really need it, thank God, we are healthy when we ai many people who do need help

How to start my story was easy, I don’t think so, like the thousands of stories of my compatriots, it was working hard, having three jobs, putting up with ridicule, mistreatment, discrimination, but always trying to do my best, and just as I met many people who supported me and I supported myself, I am proud to be able to represent my country, always be open to anyone who criticizes your work, your person, your way of being, you always be the same, help without expecting anything in return, I like people to come and enjoy my food, from the experience, I have the fortune to work in a paradisiacal place where we can offer good product, experience, I wait for you in rosarito beaches in the rocks resort and spa where you can enjoy in the different restaurants that we offer you
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
First of all, I would take him to breakfast in Tijuana at my friend’s restaurant, chef Martin San Roman, then I would take him to see the Essenica highway, we would stop in Puerto Nuevo to eat rosarito-style lobster, then we would arrive at the famous bufadora and a tour of downtown from Ensenada and later to enjoy some tostadas in the Guerrero style I would stay at the Coral and Marina hotel the next day to the Guadalupe Valley restaurant dona Estela and have breakfast after a tour of vineyards and restaurants in the valley such as that of chef Miguel Ángel Guerrero and chef jabier placenscia would stay at maglen resort and enjoy an evening in quarry with chef altamirano the next day we would go to tecate to have breakfast at nos place and eat in love with chef marce hisaki and so go to mexicali and take a tour through the capital of craft beer and if we return to tijuana and enjoy the nightlife of downtown tijuana and stay at the fabulous h otel cesar the next day enjoy the wide gastronomy that we have in the rocks resort and spa in beaches of rosarito first of all have breakfast at cafe del mar have lunch at bar ole some delicious tacos and craft beer later eat a delicious seafood molcajete and a delicious mezcaliata in front of the sea in the palapa and in the afternoon have dinner at ursula signature cuisine with a delicious wine from the valley of guadeloupe
