Meet William Eick | Executive Chef, Owner

We had the good fortune of connecting with William Eick and we’ve shared our conversation below.
Hi William, what do you attribute your success to?
Consistency. Without consistency, customers/guests do not know what to expect.
Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Matsu is a fine dining, 10 course tasting menu only restaurant in Oceanside CA. Naegi is a counter-service style fast casual restaurant that focuses on Japanese karaage (fried chicken) and sandos. Hokkaido Bread Company is a whole-sale Japanese milk bread bakery. All three have had a huge impact on how I run them, separately and collectively. There were a lot of bumps in the road to get them where they are today, but its been an amazing experience. The biggest thing Ive learned is trust. I have to trust that the staff will do the right thing and do their best to provide customers/guests with a consistency amazing experience/product.
Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I would definitely take them to Tokyo, and we would do everything we could. Eat all the things, go see all the sights, and really do our best to immerse ourselves in where we are at and the culture we are visiting.
