We had the good fortune of connecting with Paula Vrakas and we’ve shared our conversation below.
Hi Paula, what’s the end goal, career-wise?
I never imagined I would become a restaurant and music venue owner, let alone the owner of two. Yet here I am, navigating this unexpected journey. With plenty of lessons learned—often the hard way—I’m eager to share my experiences to help others avoid the same pitfalls. I’ve always believed in the power of community and the importance of fostering growth in those around me. Now, as I look to the future, my focus is on empowering others to reach their full potential. I want to turn my past challenges into valuable lessons that can help others navigate their own journeys. This next chapter is all about fostering growth and collaboration, as I believe that our shared success can create a thriving community.
Alright, so for those in our community who might not be familiar with your business, can you tell us more?
I proudly own both The Roxy Encinitas in Encinitas, CA, and The Roxy on Broadway in Denver, CO. Each location captures the charm of the 1920s, featuring expertly crafted cocktails, small plates that are locally sourced yet globally inspired, and nightly free live music. I believe that music makes your soul smile, and my goal is to create a welcoming space where guests can escape their worries, if only for a few hours.
My career began at 14 when I took a job as a busser and hostess at a sports bar. After high school, I enlisted in the Air Force. Once my military service was complete, I transitioned to working as a veterinary technician during the day and bartending at night. With over two decades of experience in various roles—from line cook to dishwasher, and bartender to bar manager—I’ve gained a wealth of knowledge across the industry.
While launching my first two restaurants, I served as the event beverage manager at the Manchester Grand Hyatt San Diego, where I honed my skills in venue management and catering. This experience proved invaluable as I incorporated those insights into creating The Roxy in both Denver and San Diego.
Nothing about the restaurant and bar industry is easy, and adding music into the mix presents its own challenges. Yet, I genuinely love what I do. Seeing the smiles on people’s faces makes every struggle worthwhile, reminding me why I’m passionate about this journey.
Owning restaurants specifically in two states has taught essential lessons in adaptability to local markets, the importance of community engagement, the value of empowering staff, financial acumen, the necessity of maintaining consistency, the significance of customer feedback, the need for work-life balance, resilience in the face of challenges, the embrace of innovation, and the transformative power of music in creating a vibrant atmosphere. In short, its taught me a lot!
I want the world to know that my journey in the restaurant and music industry is a testament to passion, perseverance, and the power of community. From humble beginnings, I’ve faced challenges and learned invaluable lessons that have shaped who I am today. My goal is to create spaces where people can connect, celebrate, and escape their worries. Through my story, I hope to inspire others to pursue their dreams, embrace their struggles, and find joy in the process.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
If a friend came to town, we’d spend our days exploring the botanical gardens and soaking up the sun at the beach. Without a doubt, we’d catch the sunset from the hill at Swamis. We’d savor fresh seafood from Fish 101, enjoy drinks at The Roxy, indulge in dinner at Bestawan Pizza, and wrap up the night surrounded by friends at The Shanty.

Paula comes from a rich legacy of restaurateurs, starting with her grandfather Paul, who owned a quaint 14-seat burger joint in Waukesha, WI. Her father, Dan, carried on the family tradition with Paul’s Metropolitan Diner before serving as a state assemblyman. From them, she learned the true value of hard work. Her grandfather, a jazz enthusiast who played alongside Les Paul, inspired her love for music at a young age, while her father has consistently supported her choices—both the triumphs and the lessons—in a positive and uplifting manner.
