We had the good fortune of connecting with Louis Supan and we’ve shared our conversation below.

Hi Louis, what was your thought process behind starting your own business?
As a child, I didn’t have a lot. My mother was young when she had me, and she really struggled with the work life/home life balance. Seeing her struggle at such a young age instilled a determination within me. I promised myself a long time ago that I would one day be in a place to where my mother would never have to work again. I know she did her best to support me growing up, but she missed out on a lot of my childhood. Being my own boss has given me the freedom to do what I love AND spend my time the way I want. There are some moments you can never get back, and this fact alone has proven to be a huge motivating force in my life.

What should our readers know about your business?
The thing that sets me apart from other chefs is the fact that I create an experience for my guests. It’s not just “dining out” or typical catering. I create memories to last a lifetime. Part of my success is attributed to my ability to “know my audience”, adjust dishes and the taste of the food based solely on reading the room. My goal is to invigorate the senses, even for the pickiest of eaters. I can change any setting to feel as though my guests are in a five-star restaurant. One of my proudest moments was catering a wedding party of forty (40) people, while having no staff, no kitchen, and no direction. I was free to experiment – as long as I could figure out how to make it all happen. I got creative and was able to create a makeshift camp outside the location with one barbeque grill, a flat top griddle, and two portable burners. The wedding was a hit, and the story went viral on social media, making this wedding concept very popular. Stepping outside the box in this way did not come easily to me. It’s taken years, many failures, but also a stubborn perseverance. I do not quit, and this extends to all areas of my career. No matter how many times I fall, I find a way to get myself back up. Each failure has taught me how to successfully execute for the future.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Day 1: Visit the beach in Huntington or Costa Mesa, spend time in the sun, grab seafood and craft drinks for dinner

Day 2: Day long hike through the mountains and find scenic routes to film and take pictures. Create a quick video to commemorate the day

Day 3: Spend the day visiting museums, have lunch there, then visit a local eatery on the way home.

Day 4: Take friend on a Hollywood Tour bus, take videos and pictures

Day 5: Visit an old-fashioned speakeasy. Visit mom and pop shops. Have dinner in local food eatery. Drive friend to airport.
