We had the good fortune of connecting with Alex Ramos and we’ve shared our conversation below.
Hi Alex, can you walk us through the thought-process of starting your business?
The path of developing our own business, started from the desire to capture what we like the most and the way we like to do things. Actually, the process was very adaptative, but the basis of it was always the same.
Being Ensenada a national beer capital, we felt it was important to create a space where you can get to know and enjoy beers from the region and the world.
What prompted us to start our own business was the need to create our very own space, offering it to people and being able to share quality product and time and, in turn, being able to generate our own source of income and with good foundations.

What should our readers know about your business?
It’s never easy to start a business, and challenges are around every corner. What is important is not to stop trying despite all the problems that may and will appear. Our professional background gave us a very solid base to structure and build the experiences that we, as customer, like to get. The service, atmosphere, cost-benefit and “the extra”, are points that we established in the very beginning and are our pillars with which we built Aurora.
You want and advise from us? Do it. Don’t stop trying. If you don’t start, you’ll never finish.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Ensenada is a great place to eat and drink! And that’s what we like to do the most.
To get breakfast/brunch, “Semilla” is a great spot. A young couple who has a great culinary background making non-pretentious, homestyle food. Coffee from Veracruz, great desserts and pastries! Definitely a must.
Also, give a shot to “Flor de la Calabaza” and “Escama”. Awesome places with great food.
Tacos de pescado are a must. Everyone has its favorites and its always a difficult topic to discuss between people. The ones we like are “Bam-Bam”. D-E-L-I-C-I-O-U-S. Fresh fish, super clean spot and, if you go on Monday or Tuesday, fish and shrimp tacos are on special.
Definitely you should visit several different Carretas de Mariscos (seafood street carts). They get the same produce than the best restaurants in Mexico. Our favorite is “El Coyote”. Get a Campechano. Octopus, shrimp, clams, sea snail, oyster and make sure you get some habanero salsa in it. Yes, its spicy, but it’s totally worth it.
Shrimp aguachile at “El Güero” is a must have.
Also, some ceviche tostadas at “La Guerrerense” are mandatory.
Muelle 3. You have to go and get their Ceviche de la Casa and the Fried Calamari. Everything else is really good, but those two are life changing.
Visit all the craft breweries in the city: Aguamala, Alta Baja, Cardera… Our favorite is Wendlandt, at its Downtown location. Grab some sliders, wings and bao buns. Wash it down with a couple or some more beers and you’ll be the happiest local tourist.
One thing you must do. Picnic at the beach.
Look for “La Joya” or “Esteban Cantu”. Its a 40-60 minute drive south from Ensenada. Get some local wines or beers, ceviche to go, a big picnic blanket and enjoy a beautiful day at a pacific, almost lonely beach.
Everywhere you go in Ensenada, people will welcome you as you are a longtime friend. Enjoy the people, the drinks, the food, the views, the beach and everything in here.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Aurora Casa Cervecera is due to the good work and success that Mexican craft breweries have had, since they have put Mexico on the map. Thanks to the fact that all these producers have done things so well, we were able to create the opportunity to open the beer panorama in this city: Ensenada market is very used to craft beer but didn´t know much more about it.
We are not reinventing the wheel, but we are making it go forward.
Big shoutout to Aguamala, Fauna, Insurgente, Wendlandt and Cardera which are the biggest producers in our region.
