We had the good fortune of connecting with Christophe Cevasco and we’ve shared our conversation below.
Hi Christophe, what habits do you feel helped you succeed?
My absolute commitment to excellence and full devotion to the business has helped me succeed.
Alright, so let’s move onto what keeps you busy professionally?
I am a third generation chef of Spanish and Italian descent, and hailing from Paris, France. My restaurant career began at age 17 in the kitchen of my father’s restaurant in Pasadena when we first emigrated to the USA.
Upon returning to Southern California in 2011, I spent 8 years as the Managing Partner of Eddie V’s Prime Seafood in La Jolla. This is where I deepened my knowledge of sourcing and cooking the freshest seafood available, while delivering world class service.
Today, I return to my roots in the kitchen as the Executive Chef and Owner of Beeside Balcony in old Del Mar and La Jolla village. The laid back coastal vibe of these seaside towns, combined with the attention to detail from my fine dining background, infuses Beeside Balcony with an easy elegance that elevates any gathering, and makes the perfect backdrop to showcase my Global Mediterranean menu.
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
I would start in Temecula for a day of wine tastings, the views are amazing and some of the wineries are VERY good as well. Old town Temecula is a little gem. I would then drive down the PCH from Carlsbad and stop at The Harbor House for fish and chips, there are a few awesome restaurants along the coast such as Wrench and Rodent, Buena Forchetta, Puesto, and many others.
The Safari Park is one of my favorite spots as well. Seeing the animals roaming freely in the park is very special.
Definitely would take my guests to Petco Park to catch a game and experience the BEST Baseball park in the US.
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
My wife, Guenivere is the number one person I dedicate to my success. From the day we met, I knew she would play a very important role in my life. She’s kept me grounded, all while encouraging me to bring my ideas and dreams to reality. While I was the Managing Partner of one of America’s top restaurants for 7 years in a very prominent community, I had Guen to inspire me to branch out and open a restaurant of our own. After 3 years of success at our restaurant, I decided I wanted more and she stood behind me in opening up a second location. Our new spot is in that very same location as the restaurant I managed for 7 years. In our short amount of time being open, we were voted best new restaurant. I’m in awe watching my wife work hard at keeping our restaurants steady and organized. Without her, my achievements would have never been possible. Even to this day, Guen supports, encourages, and inspires me to keep chasing my dreams. Having her by my side is all I could ever ask for.
