Meet Nichelle Kolokithias | Chix&Waffs Co-Owner/Military Active Duty

We had the good fortune of connecting with Nichelle Kolokithias and we’ve shared our conversation below.
Hi Nichelle, we’d love to hear more about how you thought about starting your own business?
Well I would say it was the fact that I am passionate about helping people and cooking so why not serve my community with cooking for them.

Let’s talk shop? Tell us more about your career, what can you share with our community?
Currently serving as a United States Marine presents its own set of challenges, which I navigate with dedication and resilience. As an African-American female in America, I encounter additional stressors, including the pervasive issue of racism. Despite these obstacles, I remain steadfast and resilient. What sustains me and provides a sense of peace is my passion for cooking—a lifelong love that continues to bring me joy most importantly Peace.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
If my best friend were visiting I’d tell them to go visit Little Italy. The whole strip is filled with Resturaunt’s and they are mainly 4 stars or better . Gas Lamp Quarter is a good area to get some drinks and have fun as they have arcades and bars .

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
I would like to shoutout my Grandmother who taught me to cook from 7 years old I wanted to go outside and do God knows what in the streets with my big uncle who was 2 years older than me . She would sometimes keep me inside the house with helping her cook which peaked my interest and now is 2nd nature to me.
