We had the good fortune of connecting with Luis Chacon and we’ve shared our conversation below.

Hi Luis, we’d love to hear more about how you thought about starting your own business?
Let me take you back to middle school. I was that kid selling candy and Tostitos. Around that time my dad and I would always talk about owning a business one day. Years later when the Covid lockdown happened I knew I wanted to do something to occupy my time. Like many of you I was working from home and sleeping in the same room, so it became mentally draining. By week two of the lockdown, I had already binge watched everything I could on Netflix. So I started posting food to my Instagram stories and friends would tell me to start a food page. So in May 2020 Letsgooocooking started. After a while of posting food that transitioned to selling meal prep and now doing catering events. I honestly didn’t think starting a food page would get me to where I am today. So to everyone whose been with me from the beginning and to someone who is new to my page, thank you for always supporting me, hyping me up and overall sticking with me.

Alright, so let’s move onto what keeps you busy professionally?
Growing up, I was fortunate to have grandparents and a mom who were skilled at creating art with food. My grandpa was a fisherman and would fillet fish with grace, creating perfect fillets that were a joy to work with. He would use his catch to create an amazing seafood pasta that was both delicious and visually stunning. My grandma, on the other hand, would make you amazing home-cooked meals that would make you feel like she poured all her love into the dish. Her recipes were always carefully crafted and infused with flavor, and she taught me the importance of taking the time to prepare food with care and attention to detail.

My mom played a crucial role in helping me continue the process of cooking from home and carrying on the footsteps of recipes passed down from my grandparents. She taught me to pay attention to the details of the final product of the dish, emphasizing the importance of presentation and colors. These lessons have been instrumental in helping me develop my own unique artistic style that blends traditional techniques with a modern twist.

In terms of my career, I’ve had the opportunity to work with some incredible brands and content creators over the years, which has helped me hone my skills and develop my own personal brand. I’m excited about the possibilities ahead and look forward to continuing to push the boundaries of what’s possible with food art while carrying on the legacy of my family’s culinary traditions

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Day 1:

Breakfast at Hash House A Go Go for their big portions and creative meals, visit Balboa Park and walk around North Park and Hill Crest. To end the first night, I would take them to Ballast point brewery or any of our amazing selection of bars and local breweries.

Day 2:

Lunch at Hodads for their amazing burgers and malts. After that Take a stroll around Downtown and seaport village. For dessert I’m taking them to Ghirardelli.

Day 3:
Brunch we would go to Karl Strauss and enjoy their selection of amazing food and drinks.

Day 4
Focusing on dinner, My suggestions would be C level, Cowboy star and after that we are heading to Shout house to end the night.

Overall, San Diego is an amazing city that has something for everyone. With its incredible food, beautiful beaches, stunning views, perfect weather, and rich culture, It’s the place to be.

Who else deserves some credit and recognition?
I’m grateful to have so many important people in my life who have shaped me into the person I am today. My parents have always been my biggest supporters and have taught me the importance of hard work and perseverance. My grandparents have instilled in me a strong sense of family and tradition, which has helped me stay grounded and connected to my roots. I have many fond memories of cooking with my grandparents in the kitchen, learning family recipes that have been passed down through the generations. They’ve taught me the importance of using fresh ingredients and taking the time to prepare meals with love and care. And my friends have been there for me through thick and thin, providing support and laughter during the good times and the bad. I wouldn’t be where I am today without the love and guidance of my parents, grandparents, and friends, and I’m so grateful for all that they’ve done for me.
