Hi Louis, what inspires you?
As a self-taught chef with a passion for fusion cooking, who later received classical French training and learned from my grandmother at a young age, I’m inspired by the endless possibilities that arise from blending different culinary traditions and techniques. I find inspiration in the creativity of combining diverse flavors, textures, and ingredients to create unique and exciting dishes. My background has taught me to appreciate the depth of flavor and precision of French cuisine, while also valuing the innovation and experimentation of fusion cooking. I’m inspired by the rich tapestry of flavors, techniques, and cultural influences that shape modern cuisine. I find inspiration in blending diverse culinary traditions, experimenting with unexpected ingredient combinations, and paying homage to the foundations of French gastronomy. My grandmother’s teachings imbued me with a respect for tradition and a curiosity to innovate, guiding me to create dishes that reflect both heritage and innovation. My grandmother’s influence continues to guide me, reminding me to infuse every dish with love, tradition, and a touch of personal flair.

What sets my cooking apart is a blend of creativity, attention to detail, and a deep respect for ingredients. I strive to create dishes that not only taste delicious but also tell a story and evoke emotions. I’m proud of my ability to innovate while staying rooted in culinary traditions.
My journey to where I am today hasn’t been easy. It’s been filled with challenges, setbacks, and moments of doubt. However, I’ve learned to embrace each obstacle as an opportunity for growth. Surrounding myself with supportive mentors, constantly honing my skills, and staying resilient in the face of adversity have been crucial in overcoming challenges.
One of the most important lessons I’ve learned is the value of perseverance and patience. Success rarely happens overnight, and it’s essential to stay committed to your passion, even when progress seems slow. Additionally, I’ve learned the importance of staying humble and continuously seeking knowledge from others.
Ultimately, I want the world to know that being the unorthodox chef my cooking is a reflection of my dedication, creativity, and love for the culinary arts. I hope to inspire others to explore the endless possibilities of food and to appreciate the beauty of a well-crafted dish.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
For a day-long visit with my best friend, I’d want to make the most of every moment. Here’s a condensed itinerary:
Morning:

– Visit the city’s most iconic landmark or scenic spot for some photo opportunities and to soak in the atmosphere.
Afternoon:

– Indulge in a delicious lunch at a trendy restaurant offering a diverse menu of international cuisines.
