We had the good fortune of connecting with James Terwilliger and we’ve shared our conversation below.

Hi James, what was your thought process behind starting your own business?
I decided to start my own business because I think I have a unique set of talents and experience. With those two things combined I feel that I can provide the best of what Southern California has to offer , on a pizza . We use a unique blend of local flour and source all of our ingredients as locally as possible . These are tried and true culinary techniques and we try our best to bring it all to your table .

What should our readers know about your business?
Making pizza in some of the best kitchens in New York lead me down a road I never expected. I started to work in the pizzeria as a way to pay the bills and before I knew it I was falling in love with the art of making pizza . I worked in busy slice shops , small family restaurants and huge corporations that deliver hundreds of pizza per day . After working for 10 or 12 years in kitchens from New York to San Diego I decided to put all of that knowledge and experience together and put it all on a pizza .

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
My favorite part about San Diego is Ocean Beach . It’s a classic beach town that seems forever stuck in the counterculture of the 1960s . If we are in San Diego we have to talk tacos . From fresh fish to carnitas you can find mind blowing tacos in every part of town. Oscars in Pacific Beach is my go to for fresh fish tacos and a nice dose of nostalgia. As a chef of course I would fill the week with culinary experiences and you shouldn’t leave San Diego without trying a Rockys Burger . Torrey Pines beach in La Jolla is amazing and it’s not unheard of to see dolphins , seals and hawks all on this small stretch of beach .

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
Coming from Upstate NY I have to give most of the credit to the general atmosphere of great pizza in New York. I didn’t have to search hard for a great slice of pizza and often times you find something amazing on every corner . I worked for some Corporate style pizzerias and some small family run pizzerias in New York while I was growing up . After moving to San Diego I ended up working with some of the best Pizzaiolo from Naples and all around Italy as well . If it wasn’t for all of these different experiences I wouldn’t be able to do what I do today . Thanks Pudgies Pizza , Original Italian Pizza , Ciros and Buona Forchetta .
