We had the good fortune of connecting with Alejandro Torres and we’ve shared our conversation below.

Hi Alejandro, what role has risk played in your life or career?
Taking risk has always been the difference of making what I want in life, since making a residence chage or starting my own business. If you want change you need to go all in, that´s never easy but the gratification is always enormous.

Let’s talk shop? Tell us more about your career, what can you share with our community?
Now Im a chef and co-owner of an amazing place named Envero en el Valle is located in Valle de Guadalupe in the winery of Las Nubes. This is my dream come true a restaurant in a winery where what I open with Fabiola my couple a small place with an amazing view where i can be cooking and talking with my clients living the chef dream. Thats the romantic part, but it hasn´t be easy, before this is a long way being in different kitchens working long shifts, working far from home (Guadalajara).
I start Envero in 2019 the start was not easy like any other business , when things were going on the pandemic start in 2020, everything in Baja California was closed. So we start selling food to go at home looking the way to keep the head up 3 months after we re open again, with new rules, we never give up. Now Envero is going on we are about to have our third anniversary.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I would start the trip in Ensenada in a street food placed named El Gordito, this are the best seafood cocktails and tostadas in the world with clam, shrimp and octopus. After that in our way to Valle the Guadalupe we need to make a stop in Agua mala to have a beer Mako is my favorite. Now we go straight to Envero en el valle, we start with a tour in the winery with Victor Segura the wine maker of Las Nubes he would show us were the magic happens and for sure talk all about the wine, after this i would cook for my friend in the restaurant. Having for lunch some oysters, clams and pork shank cooked in the wood oven. The dessert a fruit tart.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I always admire the people that follow and work for their dreams, in my carreer I admire a lot the chefs from the restaurant Manzanilla Solange Muris and Benito Molina. They are my mentors, they push me to the place were im now, and to believe in my skills and also to open my own resaurant.
