We had the good fortune of connecting with Luis Chacon and we’ve shared our conversation below.
Hi Luis, where are your from? We’d love to hear about how your background has played a role in who you are today?
I was born and raised in Chula Vista. My upbringing consisted of waking up to the smell of chorizo and eggs. My grandparents had a heavy impact on my upbringing and my love for the kitchen. My grandpa would arrive from his month-long deep-sea fishing trips with fresh yellow tail so we’d have fresh seafood. Before I even asked for food my nana (San Luis) pulled out leftovers from her butter container and heated up the cast iron and got creative. There comes a time in life where you never forget a meal or the smell of a kitchen and I learned that from them and that’s the impact I want to leave on others.

What’s amazing to me since I started this journey is what’s happened since then. I’ve worked with companies like Evergood Sausage, which to me is a huge deal because I would buy there products long before starting Lets Gooo Cooking. Collaborations with Bachan’s and Melindas. I was even blessed enough to receive a like from Gordan Ramsey himself on one of my pork Tenderloin post. The biggest lesson I’ve learned is to not take the fun out of it. I started this to have fun and show others that cooking isn’t that hard. Its mostly trial and error.
If there’s anything I want people to know more about my brand is. The possibilities you can achieve when an idea is no longer a dream but a reality. Without the support of friends and family I wouldn’t have created this page and be here talking to you guys today.
Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
This is not a simple question so let me break it down into categories. For breakfast I’m definitely going to Hash House for big plates and lot of flavor or Cocina 35 for some old school Mexican breakfast. Now for lunch we’ll keep it laid back and hit up a San Diego staple for burgers, Hodad’s or Rocky’s crown pub. If you’re feeling tacos for lunch instead we’re heading over to Fernandez restaurant and of course tacos El Gordo. For night life we are going to third ave or downtown for some drinks. To end the night with some dessert I’m taking them to chocolate creamier on 5 ave. Overall San Diego has so many options. You got convoy with amazing ramen, Korean bbq. Head down to barrio Logan and you have las cuatro milpas. Overall there’s so many options you can choose from. That’s why it’s the best city in the world.
