We had the good fortune of connecting with Louis Supan and we’ve shared our conversation below.

Hi Louis, what makes you happy? Why?
I love watching people grow and better themselves. As a fitness trainer and coach, I really enjoy being there for my students both on and off the clock to encourage them to achieve their goals. As a chef, it makes me happy to bring comfort and a feeling of home to people that taste my food. Building relationships with people is very important to me. Being able to connect and network with people on a non-transactional level is more self-gratifying than keeping things money-based and all business. I always try to keep myself available to people if they need me. I want the people I encounter to always feel like they have someone to talk to and that will be there for them. I really enjoy supporting people and watching them develop into the greatest versions of themselves. If I can make a positive impact in people’s lives, that is what makes me truly happy.

Let’s talk shop? Tell us more about your career, what can you share with our community?
When it comes to crafting my food, I want to create a sense of nostalgia within the consumer. I use my sense of smell instead of taste to create unique flavor combinations that almost seem bizarre, but actually work together nicely forming an unmatched/unforgettable taste that feels familiar. I specialize in fusion cooking and have trained within a wide variety of ethnic restaurants in order to pay proper homage to each culture’s dishes. This has vastly expanded my pallet and knowledge of spices in order to conjure up more creative and comforting meals. I also have eccentric concepts I use within my pop-up events to elevate the way my clients see food. I accomplish this by using minimal, inexpensive ingredients to create a 5-star gourmet meal. I am most excited about upcoming food competition shows that I will be on. I love competing on cooking shows because I feel like I gain a lot of perspective meeting other chef’s with all types of culinary backgrounds. Competing brings out a lot of my inner creativity by forcing me to think outside the box, and I really enjoy being challenged and expanding my way of thinking. To get to where I am today, it took a lot of sacrifice. I left my stable income job in finance, sold most of my belongings, and drained my savings accounts in order to peruse my dreams. Everything in life that is worth having takes sacrifice. I was tired of working a 9 to 5 job in a field where I wasn’t truly happy. My passion has always been in the kitchen, and seeing how my food brings joy to people that consume it is what keeps me going. Networking with people, continually pushing to accomplish my goals, and general word of mouth really helped expand my services. I’ve learned that throughout this journey there is a lot of trial and error. In this field, you need to accept that failing is all apart of the process. Even when you are in the moments of self-doubt, remember why you are doing this, and that it will all be worth it. I’ve also learned that in order to not lose focus of your goals, you need to surround yourself with people that inspire creativity and motivate you to be your best at all costs. Being able to distinguish impulsive purchases versus smart business purchases is also another lesson I’ve learned, because you don’t want to be stuck with products long-term that you can’t actually use or benefit from. My Mother had me when she was incredibly young, and I was raised in a low-income family. Since I could remember, my Grandma was always incredibly hard-working and dedicated to taking care of our large family even though we didn’t have a lot. My Grandma really inspired my passion of cooking, because she too loved to cook and I used to go into the kitchen with her and watch until I was old enough to learn, and she taught me. My Grandma was my absolute favorite person in the entire world, and when I lost her it was devastating. Her legacy inspires me everyday to keep moving forward and to bring happiness to others when they eat my food the same way she did. When people taste my food, I want the flavors to make them feel at home. Quality is very important to me, I attain this by getting my ingredients from local and sustainable suppliers. While being a private chef, I am also a fitness trainer, as well as the CEO of Loucideatz, where I formulate meal prep packages for people with a variety of dietary restrictions and plans. There’s a common misconception when it comes to certain health foods or diets that they have to be bland in order to meet all the requirements. This is false, I create my meal preps with so much flavor, that it doesn’t feel like you are even on a diet. I want my clients to thoroughly enjoy my food when they eat it. Every week, I change up my meal preps so that my clients are never always eating the same thing and tasting the same flavors. Overall, I have had a relatively high success rate with clients that have stuck to my meal plans. One of my clients lost about 41 pounds in 5 months. I also had another guy that has been on my plan for a year lose fat and gain a large amount of muscle, completely altering his physique and inspiring others to order my meal preps and a healthy fitness lifestyle.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
If my best friend was visiting for the week, during breakfast time I would take them to either a diner, mom-and-pop shop, or a cute coffee shop. Depending on what was planned for the day, we might have a later start and go to a nice brunch spot along the coast of the beach. Really fun places in the area to visit obviously includes the beach. We also have some fun theme parks in the area such as Knotts Berry Farm, Disneyland, and Universal Studios. Other fun activities down here include axe throwing, escape rooms and bowling alleys! If my best friend wanted to do something more relaxing, we could go sight seeing, or take a trip down to Catalina Island to explore. Lunch and Dinner go-to places are usually Shabu or Korean BBQ spots where I am able to cook for visiting guests even when I’m not working. For later night activities, I like to go to Dave and Busters, or to the Downtown Disney District.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
I would like to dedicate this shoutout to my Apu (Grandma). She was the hardest working woman I have ever met that always put her family before herself. She taught me how to cook, how to be resourceful, and how to grow through life’s hardships. I would not be the man I am today without her, and I miss her dearly. Also to my family, close friends, my tribe and colleagues that push me to be my best, I am eternally grateful. Lastly to my significant other for constantly challenging me and sticking by me through this journey, thank you for inspiring creativity within me.
