We had the good fortune of connecting with Lauren Murawski and we’ve shared our conversation below.

Hi Lauren, can you talk to us a bit about the social impact of your business?
As a full-time content creator, I have dedicated my career to being the voice I wish I had when I was first diagnosed with Celiac, IBS, and Crohn’s Disease. Through my platforms, @eat.glutenfreewithme on Instagram and @eatglutenfreewithme on TikTok, I’ve helped countless people get the testing they needed to finally receive a diagnosis—giving them the answers and validation they’ve been searching for. I’ve guided those who felt lost, alone, and defeated by their health struggles toward hope, healing, and a renewed sense of joy. When there was no community, I built one—so that no one has to navigate this journey alone.

I travel the world to show that a celiac or autoimmune diagnosis doesn’t have to mean the end of adventure. Along the way, I’ve met incredible community members in nearly every country I’ve visited—even in the middle of the ocean on a boat in Greece. It’s surreal to see how far this space has reached, and it reminds me why I do this—to make sure no one ever feels alone in their diagnosis. My platform is more than just content; it’s a movement for education, empowerment, and connection. Together, we are proving that life with celiac disease and autoimmune conditions isn’t about limitation—it’s about learning to thrive.

Alright, so let’s move onto what keeps you busy professionally?
Being an influencer means being a solo entrepreneur. Many people who consume content don’t realize the level of business strategy, marketing, and creativity that happens behind the scenes. You wear every hat—videographer, creative director, editor, CEO, accountant, and so much more.

I started this journey at 22 with no roadmap, no mentor, and no clear guide on how to turn content creation into a career. So, I did what any self-starter would do—I learned. I studied successful creators on YouTube and TikTok, figuring out how to navigate this industry and build something sustainable. When I took this full-time, it transformed from a fun hobby into a real business. I had to establish structure—set work hours, create strategic brand outreach, and develop a tone of voice that was both authentic to me and valuable to my audience.

I went from making almost nothing to earning six figures in a single year—all by 22 years old. But on the other side of that success, I learned firsthand what burnout really feels like. You can achieve incredible things, but if they consume every part of your life, it’s not sustainable. At 25, I’ve come to value something I once overlooked: it’s okay to grow slowly. Success isn’t just about hitting milestones quickly; it’s about building something that lasts while still protecting your passion, creativity, and well-being. That’s the balance I strive for today.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
If my best friend with Celiac Disease was visiting San Diego for the week, I’d make sure she had the best time while staying safe and feeling amazing! We’d start with a relaxing morning at The Detox Cottage, where we can unwind in the sauna and take a refreshing cold plunge, giving our bodies a detoxifying boost. After that, we’d head to SALT Vault Pilates for a rejuvenating Pilates class—low-impact yet powerful, perfect for a full-body workout that leaves us feeling energized. Next, we’d enjoy a stroll along the Pacific Beach boardwalk, taking in the ocean views and fresh air. For lunch, we’d grab a traditional açaí bowl at Açaí Carioca, packed with fresh fruits and gluten-free toppings. We’d spend the afternoon at the Leucadia Farmers Market, where we can pick up local, organic produce and gluten-free treats. For lunch, we’d head to Nectarine Grove, a farm-to-table spot offering gluten-free options that are both nourishing and delicious. To wrap up our trip, we’d catch the stunning sunset at Sunset Cliffs in Carlsbad, soaking in the breathtaking views of the ocean and cliffs—making it the perfect ending to a wellness-filled week in San Diego.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
As cheesy as it may sound, the world of influencing is often looked down upon. To many, it’s not seen as a “real” or legitimate job. When I first started my career, I faced criticism from everyone around me—including those closest to me. So, I want to take a moment to thank myself for not listening to the negativity and for pursuing what I knew was meant for me. I’ve always known that I wanted to make an impact on the world, and if I had listened to everyone else’s version of what my “perfect” life should look like, I wouldn’t be where I am today. While success is often built with the help of others, I think it’s just as important to acknowledge ourselves—for pushing through the doubt, staying true to our vision, and making it happen.
