Meet Christophe MEYER | PASTRY CHEF GRADUATED IN 1983

We had the good fortune of connecting with Christophe MEYER and we’ve shared our conversation below.
Hi Christophe, what was your thought process behind starting your own business?
First, we love California, and we are fans of American Classic Cars. We discovered Palm Springs during a journey twelve years ago, and fell in love with the place. We thus scoured the area to get to know it better and met with storekeepers and real estate agents. We also had a look at pastry shops and noticed that our future business had its place and that it would have to be in Palm Springs.
What we wanted to do was bring a French touch by producing a product of quality and authenticity. We were convinced there is a market for such products, for a sophisticated American clientele.


Alright, so for those in our community who might not be familiar with your business, can you tell us more?
We started in October 2014 and decided to offer high-quality products with French authenticity, made daily by hand with French flour ( without GMOs, preservatives, and pesticides ) and French butter. We wanted to be different
This work sets us apart with French expertise that doesn’t exist here and is also disappearing in our country. It’s very hard work, because we also work nights! This work pays off, and we’re proud to have become the best French bakery in the Coachella Valley! And we’re both there every workday to constantly monitor our production and sales. We’ve earned the loyalty of residents of Palm Springs and the surrounding area, as well as many Americans from other states in this country. We remain humble and are very happy to have won over purist lovers of French pastries, breads, and cakes.


If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
We’d like to tell our friend the story of Palm Springs, so rich since the Native Americans, a small town so different in its 1950s architecture, its diverse population, its climate, and so rich in its location, not far from the ocean, the mountains where it’s fantastic to discover places for walks, not to mention the Aerial Tramway. We would also like to invite him to taste good cuisine like the Johannes restaurant, or even Mexican specialties, to enjoy a good glass of Californian wine! There are so many things to do locally!


Who else deserves some credit and recognition?
My parents ( died )…and my pastry Mentor, Mr Leballeur, with whom I learned so much!
